TAIPEI, Taiwan – Shangri-La Far Eastern in Taipei is currently hosting an Indian Gourmet Fiesta, presenting a culinary exploration of India's diverse regional dishes.

Guest Chef Gagandeep Singh Sawhney, alongside Chefs Shiv Rawat and Rakesh Semal, from Shangri-La Eros New Delhi, are showcasing traditional Indian recipes. The event is scheduled to run through August 7.

Indian cuisine is celebrated for its use of aromatic spices like cumin, ginger, cinnamon, chili, and garlic. The chefs expertly combine these elements to create balanced and complex flavors.

The menu features a variety of dishes, including curries, tandoor-cooked meats, and seafood specialties. Chef Sawhney emphasizes the importance of blending spices, fresh herbs, and aromatic ingredients to achieve depth and harmony in Indian cooking.

Signature dishes include Ludhiana butter chicken, a northwestern Indian specialty featuring chicken simmered in a creamy tomato-based sauce with mild spices.

The almond cheese curry, traditionally served at festive banquets in northern India, is another highlight. It features a sauce made from almonds, cashew cream, and butter, offering a mellow flavor.

The spicy stir-fried crab from Goa, a coastal state in southwestern India, is also available. The dish consists of fresh crab marinated, deep-fried, and tossed in a blend of spices and chili peppers.

The event offers insight into India’s regional culinary diversity.

Northern Indian cuisine typically features dairy-based dishes and hearty breads, using ingredients such as yogurt, ghee, and paneer. In contrast, Southern Indian dishes often incorporate coconut, tamarind, and chili. Eastern India's cuisine is influenced by its proximity to the Bay of Bengal, and often includes seafood and mustard seeds. Western Indian cuisine utilizes seafood and coconut, balanced with peanuts and cooling spices.

Lunch is served daily from 11:45 a.m. to 2 p.m., priced from NT$1,580 (US$53). Dinner is available from 6 p.m. to 9:30 p.m., starting at NT$1,680.
